“This means a lot to us because a lot of people from different places come to try us out,” said Flavors of Tabasco founder Yadira Mendez. “I actually get a lot of catering from people going over there.”
Mendez’s specialties are empanadas and biria tacos, which are six hours of beef cooked and served.

“We cook everything from scratch,” Mendez told CBS News Colorado. “We strive to provide the highest possible quality.”
The recipe originated in Mexico’s southernmost city, Tabasco, Mexico, and has been passed down in her family for generations. Her flavor comes from her proprietary blend of spices and different types of chili peppers.
“As a single mother, I was struggling years ago and was selling tamales just to pay the rent,” Mendez explained.
Over the past three years, Mendez has grown his hobby into a family-run business. She owns two of her own Tabasco flavor trucks and her customers line up to taste her authentic Mexican cuisine.
