Sarasota-Manatee’s newest resort and rooftop restaurant is set to begin welcoming guests this week.

The Palmetto Marriott Resort & Spa, which offers spectacular views of the mile-wide Manatee River, which empties into the Gulf of Mexico, previously announced plans for a grand opening in May.

In two months, the eight-story resort will officially open with 252 rooms and upscale amenities like restaurants and bars. Once open, it will offer a covered walkway from the hotel to the adjacent Bradenton Area Convention Center, which is undergoing a $48 million renovation to match the resort’s style and expand its space.

“The resort and its culinary concept will be open for guests and visitors to enjoy starting July 16,” a Palmetto Marriott Resort & Spa spokesperson said in a statement.

Palmetto Marriott Resort & Spa Appoints Executive Chef

Palmetto luxury Resort & Spa is an institution unlike any the city has ever welcomed, announcing the appointment of new Executive Chef Anthony Castro, whose impressive resume includes more than 25 years of experience with leading hospitality companies including The Ritz-Carlton, Four Seasons and Shangri-La Hotels & Resorts.

Castro will oversee Oyster River rooftop restaurant, The Social and the resort’s catering operations. Oyster River offers eight-story views of the Manatee River, while The Social Restaurant & Bar is adjacent to the lobby.

Palmetto Marriott Resort & Spa has appointed Anthony Castro as its new executive chef. Castro will oversee Oyster River Rooftop Restaurant, The Social and the resort's catering operations.

According to a press release, Oyster River Rooftop Restaurant will serve a coastal-inspired menu featuring fresh Florida cuisine with a Mediterranean twist, with dishes designed to complement the panoramic views of the river and Gulf of Mexico.

Guests can enjoy shareable dishes such as a mammoth seafood tower, whipped ricotta caviar, wagyu steak carpaccio and king shrimp thermidor, all accompanied by a variety of oysters from Florida Bay, New York, Massachusetts and Japan.

Main dishes include sea bass with parsnip puree, lump crab Oscar poulet, and wagyu beef filet, while a full liquor bar serves signature cocktails such as the Palomita Fresa and Ocean Pearl.

Located on the first floor, The Social serves food and handcrafted cocktails in a casual seaside setting.

Highlights from the breakfast menu include the Dulce Waffle with warm dulce de leche, fruit and nuts, the Bistec de Palomilla & Eggs – steak and eggs with arugula, tomato salad, hash and chimichurri, and the Wheatgrass Veggie Vibrancy Smoothie.

Lunch and dinner options include Machete Devil Crab, Lobster Bites, Birria Asada Tacos and Cortez Yellow Grouper with herb oil, coffee beurre blanc, callaloo bok choy, Brussels sprouts and jasmine rice.
