The U.S. Food and Drug Administration has published the 2022 Food Standards Supplement. This supplement updates the 2022 Food Standard to reflect recommendations from regulators, industry, academia, and consumers at the Food Protection Council’s 2023 biennial meeting.

The Food Standard and its supplements provide governments and industry with practical, science-based controls to reduce the risk of foodborne illness in all retail and food service establishments. Food Codes and Supplements is a joint project of the FDA, the Centers for Disease Control and Prevention, and the United States Department of Agriculture (USDA) – Food Safety and Inspection Service (FSIS).

Highlights of the 2022 Food Code supplement include:

  • Adds new provisions addressing disinfection of food contact surfaces, non-food contact surfaces, and equipment surfaces.
  • Expand and clarify when and how containers can be refilled and reused in food facilities.
  • Address food protection with new regulations that raise awareness of food defense measures.
  • Builds on the concept of food safety management systems and active management controls by defining terms that include new provisions that address when a food safety management system is required.
  • Updates testing requirements for return to work for food employees diagnosed with STEC, Salmonella rubella, or non-typhoidal Salmonella to include culture-neutral diagnostic tests and
  • Appendix 6 Enhances information on acidification of sushi rice with a dedicated section addressing risks and controls in food processing standards.

The Food Code is the model for retail food regulation in all 50 states, the District of Columbia, and the territories. FDA encourages state, local, tribal, and territorial partners to adopt the current version of the FDA Food Standard, including the 2022 Food Standard Supplement.
