Offering guests safe, gluten-free options doesn’t mean you have to put your rock star chef persona on hold. And there are plenty of ways to do just that.

Natoli, gluten-free menus are inherently futuristic. “This is an important factor for our menu engineering because of this generation’s propensity to adapt to diet,” he says. “Our board dining room offers gluten-free and plant-based (and non-plant-based) menu options daily, primarily for his Generation Z customers.”
